COCONUT APPLE AND PEAR CRUMBLE

You have to love coconut for this one. And crumbly crumble.

A few weeks ago I went on my very first apple picking, with Ben and his parents! I’ve wanted to apple pick for ages, but living in a city with no car made that pretty impossible. We came home with 20 pounds of apples! You’d think that would last us a while, but between me having a midnight apple every night & testing a bunch of recipes, I think they lasted a week and a half. (haha)

As you may notice in future posts, there (most likely) will be a lot of coconut flavoured recipes, since it’s Ben’s favourite flavour. So here’s one! It’s as crumbly as crumble can possibly be, because of the coconut flour! I didn’t know if apple coconut crumble would be a good combo, but it’s great! And most importantly, it fits most dietary restrictions, since it’s gluten free, dairy free, vegan, sugar free and nut free!

COCONUT APPLE AND PEAR CRUMBLE

TOPPING
1c. coconut flour
1/4c. maple syrup
3tbsp. coconut oil (hard)
1tbsp. coconut shavings
pinch pink himalayan salt
zest of one lemon

FILLING
3 large apples
1 large pear
2tsp cinnamon
2tbsp lemon juice
2tbsp maple syrup
pinch pink himalayan salt

STEP BY STEP
(12×8 inches glass pan)

Preheat oven to 350 degrees. Peel, core and slice your apples & pear in thin slices. Place in a bowl, add cinnamon, lemon juice, maple syrup and salt and stir until every slice is coated. Throw them in a 12×8 inch glass pan. Put aside. In a clean bowl pour all “topping” ingredients in, rub the coconut oil into the dry ingredients with your fingers until incorporated. Crumble should resemble moist clumps. You can make clumps into a ball of dough with your hands and then crumble over apples and pears. Pop glass pan in the oven for 30-45 minutes, until the top of the crumble is light brown in colour.
